Hi there, a chef and pastry chef from Dublin, Ireland. My dairy‑free journey started about six years ago, although I didn’t realise it at the time.
While travelling through Southeast Asia and Australia, I suddenly became very unwell. By the time I reached Melbourne, I had hives all over my body, constant sinus issues, and felt completely run‑down. A doctor diagnosed a sinus infection and gave me antibiotics, which helped temporarily, but the strange symptoms kept returning. They were small enough not to stop my life, but big enough that something always felt “off”.
When I returned to Dublin during Covid, everything escalated. My lip swelled, hives covered my body, and I was so weak I could barely function. After steroids, antihistamines, and endless tests, the answer was once again: sinus infection. This became a pattern — two infections a year, each one knocking me sideways and always needing antibiotics.
Things reached a breaking point when I moved to the States in 2022. The infections became more severe, and I had to take antihistamines three times a day, do nasal rinses twice daily, and even use an inhaler because of the mucus on my chest. I switched to alternative milk and butter, but because dairy was still in my system, nothing changed. Life became incredibly difficult — physically and mentally.
Coming home to Ireland, I finally realised the truth: I was intolerant to dairy. No dramatic test, just undeniable results. When I removed dairy completely, everything shifted. My bloating disappeared. My skin cleared. My infections reduced. My energy came back. It felt like a cloud lifted and I finally recognised myself again.
As a chef — and especially a pastry chef — this was a huge adjustment. Working with butter, cream, and milk is second nature in pastry. But once I understood my limits, everything became manageable. I can still taste, test, and work with dairy professionally without reacting, which is a lifesaver in my career.
Through my travels, I’ve seen how inconsistent dairy‑free options are around the world. Some places are brilliant; others barely offer anything. And don’t get me started on paying extra for alternative milks — especially when I’ve worked in cafés and know the cost difference isn’t what people think. For those of us who can’t have dairy, it feels unfair to be charged more for something we don’t have a choice about.
Despite all the challenges, I wouldn’t change a thing. Going dairy‑free gave me my health back, my clarity back, and honestly, my life back.

There’s plenty of information out there, but not enough that feels real, lived‑in, or written by someone who actually understands what it’s like to navigate daily life without dairy.
As a chef — and especially as a pastry chef — I’ve learned how to adapt recipes quickly and confidently. But I also know that not everyone has the training or the tools to make those swaps easily. That’s why this space exists: to make dairy‑free cooking feel simple, achievable, and genuinely delicious for anyone.
